Baked Garlicky Lemon Dill Chicken
25 mins prepServes 4
The chicken is marinated in a zesty blend of garlic, lemon, and fresh dill, giving it an incredible flavor. The best part? It’s baked to perfection on a bed of tender potatoes and onions, making it a complete meal in one dish!
1. Preheat the oven 400°F.
2. First, clean the chicken and pat it dry. Next, peel and wash the potatoes, cutting them into medium-sized cubes. Don’t forget to chop the onion, garlic, and dill, placing everything in a baking dish.
3. Make the marinade! In a bowl or mason jar, combine chicken stock, lemon juice, EVOO, spices, and salt. Give it a good stir or shake until everything is mixed well.
4. Pour the marinade over the chicken and veggies and mix thoroughly. You can let it marinate for half an hour or overnight for deeper flavor (If you do decide to marinate overnight make sure it’s only the chicken, garlic and dill. You can add the potatoes and onions right before baking. Reason being the potatoes will turn color when peeled and left overnight).
5. Bake for 1 hour and 20 minutes basting every 30 minutes.
6. Garnish with lemon slices, fresh dill when serving and enjoy!
